This dish takes rice a notch higher; creamy & full of flavor. And, you only need a couple of ingredients to make this magic. The hardest part of this recipe is waiting on the rice to cook.
The recipe uses coconut milk, dhania and a little lime juice. Coconut milk is very rich, so we freshen it just a little by adding lime juice.
Rice is pretty easy to cook, a ratio of 1:2 (rice: water), cooked over medium – low heat ensures a well-cooked fluffy rice. For this recipe however, we’ll do 1 cup coconut milk and 1 cup water so that the rice isn’t overly sticky.
Coconut Dhania rice

1 cup rice
1 cup coconut milk
1 cup water
1 large onion
1 bunch dhania
1 lime - juiced
Salt to taste
Directions
Dice the onion into tiny pieces. Cut up the dhania as well.
Wash the rice until the water runs clear. Set aside.
In a sufuria, over medium heat, add the onions. Cook until they caramelise, taking care not to burn them.
Add the water and coconut milk and bring to a boil. (You can also pre boiled water and add it at this point. This is easier)
Add the rice. Reduce the heat to medium - low. Cover and let simmer.
Once all the water has been absorbed, add the dhania and lime juice and fluff it to mix through.
Serve hot!
