Fruitty Wimbi & Orange cupcakes

These cupcakes are gluten free and low on processed sugar, making them a favourite snack. They hit the spot every time.

Ingredients

  • 3/4 cup wimbi flour

  • 1/2 cup oat flour. (You can make your own oat flour by blending quick oats)

  • 1/2 teaspoon baking soda

  • 1 teaspoon baking powder

  • 1 teaspoon cinnamon

  • 1/2 teaspoon nutmeg

  • 1 egg

  • 1/4 cup honey

  • 1/4 cup brown sugar

  • 1/2 cup (112g) unsalted butter - melted

  • 3/4 cup buttermilk

  • Juice and zest of one orange

  • 1/4 teaspoon salt

  • 11/2 cups mixed berries

Directions

  • Preheat oven to 175C

  • Line a 12 cupcake pan with cupcakes liners

  • Mix all the dry ingredients in a large bowl and stir well to combine.

  • Combine the wet ingredients. Add the wet ingredients to the dry and mix together.

  • Spoon batter into the cupcake liners, filling to 2/3 full

  • Place in the oven and bake for 20 minutes or until the centre is firm.

  • Allow to cool completely before indulging.
